Ever tried making your own cocktail? It shouldn't be so hard to mix gin/vodka/whiskey/rum, juice, fruit, sauce, and other flavors together, but there is a way to make the best glass of cocktail and we have science to thank for that.
In an interview with Wired magazine, Jennifer Colliau, the beverage director at the San Franciscan bar The Interval, says that ice makes the difference between a good cocktail and the perfect one. When you stir or shake your cocktail with ice, the drink gets diluted more and that dilution brings out the flavor and the texture. But different kinds of cocktails have different dilution requirements, and those are based on the drink's temperature (which is based on its ingredients).

In the video, Jennifer made the classics Manhattan, Old Fashioned, and Gimlet. Here's the recipe for each, so you can try your hand at concocting cocktails and come off as a pro!
Manhattan (serves one)
2 ounces rye whiskey
1 ounce sweet vermouth
2 dashes Angostura bitters
1. Pour the whiskey, sweet vermouth, and bitters into a mixing glass filled with ice.
2. Stir until you hit a zero-degree Celcius temperature.
Old Fashioned (serves one)
2 ounces bourbon or rye whiskey
1 teaspoon superfine sugar or 1 sugar cube
2 or 3 dashes of Angostura bitters
1. Place the sugar in a glass and douse it with the bitters. Add a few drops of water.
2. Stir until the sugar is dissolved.
3. Add the whiskey and give a few good stirs to further dissolve the sugar, then add a couple of large ice cubes. Stir a few times to 1.67 degrees Celcius.
Gimlet (serves one)
1 1/2 ounces of gin
1 ounce of lime juice
1 teaspoon simple syrup
1 cup of ice
1 lime wheel
1. Combine the gin, lime juice, and simple syrup in a cocktail shaker.
2. Add ice and stir until you go down to -2 degrees Celcius, way below freezing point.
With all those temperature readings, that means all you really need to make the perfect cocktail is a thermometer! Stir with it so you can be really precise.
