Negroni Sbagliato

Ingredients
- 25ml CAMPARI
- 25ml Vermouth Rosso
- 25ml Cinzano Prosecco D.O.C.
- Orange slice
Method
Fill a rocks glass with ice, pour in the spirits, and top up with the Prosecco, then lightly stir so as not to lose the sparkle. Garnish with a fresh orange slice.
Aperol Spritz

Ingredients
- Three parts Prosecco (75ml)
- Two parts Aperol (50ml)
- One part soda water (25ml)
- Orange slice
Method
Fill a large wine glass with ice. Pour Prosecco followed by Aperol. Add a dash of soda and stir. Garnish with a fresh orange slice.
Bellini

Simple: tick. Delicious: tick. Basically Bellinis can do no wrong.
Ingredients
- 500ml peach purée or peach nectar
- 1 bottle Prosecco
Method
Put the peach puree in a Champagne flute up to about 1/3 full and slowly top up with Prosecco.
Ginger Spritz Soda

Ginger + Prosecco = not a combination we're used to seeing. But you know what? We're here for it.
Ingredients
- 2oz Lillet Blanc
- 3oz Prosecco
- Splash of ginger beer
- 1 slice peeled ginger
Method
Place the ginger slice against the inside of a rock glass, fill with ice and add the Lillet blanc and prosecco. Top up with ginger beer and stir gently to combine.

Ingredients
- 2oz Pimm’s No.1
- 3oz Prosecco
- Splash of ginger ale

Method
Pour Pimms and Prosecco into a rock glass filled with ice, top with ginger ale and stir to combine. Garnish with a mint sprig and serve.

- 40ml St-Germain
- 60ml Champagne or Prosecco
- 60ml Sparkling water

Method
Mix in a Collins glass over ice. Stir gently and garnish with lemon twist.

Ingredients
- 2 peaches, peeled and quartered
- 350ml cloudy sparkling apple juice
- 1 lime, zest peeled and juiced
- 1 teaspoon coconut sugar
Method
Combine the peaches, 250ml of apple juice, lime juice, sugar and a couple of ice cubes in a blender and blend until smooth. Pour into two glasses adding the remaining apple juice and garnish with the lime zest.
