Serves 4 to 5
1 1/2 cups pineapple juice
1 cup white tequila
1 cup Cointreau
juice from 10 lemons
lemon or lime wedges, to serve
fresh pineapple slices and mint leaves (optional)
1. Combine pineapple juice, tequila, Cointreau, and the lemon juice in a pitcher; chill for at least 3 hours.
2. Rub the rim of 4 to 5 glasses with a lemon wedge and dip in salt. Portion mixture among glasses with ice cubes and garnish with fresh pineapple slices and mint leaves.
